Acetaia Giusti is the oldest producer of Balsamic Vinegar of Modena in the world. Founded in 1605, the company is now led by Claudio Stefani Giusti who, with an entrepreneurial vision based on flexibility, continuous improvement and valorization of talents, carries forward a centuries-old knowledge in continuous evolution.
Acetaia Giusti products are the result of centuries-old knowledge, handed down from generation to generation by family members. The 600 historic batteries - originating from the eighteenth and nineteenth centuries - are still used to make Giusti Balsamic Vinegar of Modena. One of the fundamental elements for the refinement of Balsamic Vinegar, capable of attributing different organoleptic characteristics to the product, is in fact wood: if chestnut, rich in tannins, gives the classic brown color, cherry sweetens the flavor, juniper gives the resinous essence and oak gives the typical vanilla scent. Furthermore, the older the barrel, the more intense the aromas and character transmitted to the Balsamic Vinegar.
Among the most representative products of Acetaia Giusti are the five Balsamic Vinegar of Modena PGI part of the Historical Collection: different in recipes and aging time, they are classified today with the number of medals obtained on the occasion of the Universal Expositions of the late nineteenth century. These are joined by the Grandi Invecchiati, among which the Aceto Balsamico Tradizionale di Modena DOP stands out - produced only with cooked grape must and aged for a minimum of 12 years or 25 in the case of the Extravecchio - and the new collateral lines, including the Perle di Aceto Balsamico, the Cioccolatini, the Panettone, the Colomba and the Giusti Vermouth, the first to be aged in ancient barrels of the Giusti family.
The innovative spirit of the company is also demonstrated by the recent collaborations with artisans and professionals of taste who - through a process of refining the raw materials in barrels that have contained Balsamic Vinegar of Modena for years - have created products capable of reproducing all the aromas of a vinegar factory. This is how the Alchimia chocolate was born in collaboration with the master chocolatier Gianluca Fusto - obtained from cocoa aged in barrels for 4 months and then worked with Balsamic Giusti -, the Acetaia 1605 sorbet by Stefano Guizzetti of Ciacco Lab, obtained from an infusion of water and pieces of historic barrels, and the Prosciutto di Parma Barrique from the F.lli Galloni ham factory in Parma, which completed its maturing in ancient Balsamic barrels.
THE GIUSTI BOUTIQUES
The first Giusti Boutique opened in Modena in 2019, inside a building designed by the famous architect Gio Ponti and overlooking the iconic Piazza Grande. In December 2021, the Milan store opened, in via Spadari, a few steps from the Duomo, while in April 2022 the Bologna store was inaugurated, in via degli Orefici. The Giusti Boutique network will be further expanded in 2024 with two new openings: in October the store in Florence, on the historic Via del Corso, and in December the second store in Milan, featuring a more contemporary design, in tune with the vibrant atmosphere of Corso Como. Located in the historic centers of cities that can attract an international audience, the Giusti Boutiques were created with the aim of spreading the culture of Balsamic Vinegar of Modena throughout the world. The stores, in fact, are not just points of sale, but evocative places that retrace the history of the company thanks to the presence of centuries-old barrels and ancient objects used in the art of vinegar making. Through an immersive and sensorial narration by the Acetaia Giusti team, visitors have the opportunity to fully understand the enormous cultural value of the product.
